Buckwheat dark choc chip banana bread
Because I like to cook with bananas
Bananas are one of my fav flavours and fruits, I had lots of banana breads and I have my favourite recipe for it, which y’all have probably seen by now, but if not, it’s in my previous posts. Today we tried what can be called classic banana bread with choc chips, though I added buckwheat flour to it, so it’s not that classic anymore heh)
It turned out pretty good, not really sweet, with nice buckwheat and banana flavours. Though I think it lacked a biiiiit of moisture, as buckwheat flour is higher in protein content it needs more liquid to it.
Prep these:
Mix the wet stuff first
Let me say this first - if you want your banana bread to be like mine, you need very ripe bananas, you need black bananas that have been siting in the fridge for 3 weeks at least haha. You want them to be jet black on the outside and on the inside… I’m being serious.
So, mash the bananas in a big bowl, no need to mash them too well, I like mine to have nice chunks of bananas in the loaf. Then go the honey, eggs, salt, yogurt, some coconut milk (40-50ml), and melted butter. Give it a good whisk until it’s smooooooth enough.
Mix your dry
Add your spices of choice and then slowly fold the dry into the wet. Throw in your chopped chocolate half way through mixing the dry. Try not to overmix it much, just enough so there’s no flour left. The batter is gonna be thhiiiick.
Pour the batter into a lined or buttered loaf tin, slice your extra banana in half and lay it on top. Sprinkle a little sugar over the banana so it gets all caramelised and glossy 😗
Pop it in the oven at 175°C for about 1 hour to 1 hour 15 minutes. Keep an eye on it after the 1hour. You know right, if in doubt, stick a toothpick in, and if it comes out with just a few crumbs, you're golden.
Let it cool (at least a little!) before you slice. Try it on its own first and then with yogurt or ice cream! And of course - best with freshly ground, nice quality cup of coffee, hope you trust me on this one))
